Best vegan banana cake recipe

It has a fluffy, light texture with two bananas inside. This is the perfect banana cake.

The entire two-layer cake contains only a third of a cup of sugar. The recipe is oil-free, dairy-free, egg-free, gluten-free, nut-free, refined sugar-free, low calorie, and low fat.

Ingredients: Banana, water, baking powder, salt, vanilla extract, flour and vinegar. Optional coconut or vegetable oil.

This recipe is compatible with white all-purpose flour and certain brands of gluten-free all-purpose flour. We haven’t tested it with almond, coconut, or whole wheat flour. The cake is dense and tastes good, but it’s made with oats.

Add a teaspoon of ginger, nutmeg powder, cloves, and allspice to make a banana-spice cake. Add a tablespoon of cinnamon.

To make a chocolate-chip peanut butter banana cake, replace the oil with an equal amount of softened peanut butter. Add half a cup of mini or regular chocolate chips to the dry ingredients. Add chocolate frosting to the top.

Use your favorite all-purpose granulated sugar, such as regular or unrefined sugar, coconut sugar, or evaporated sugar cane juice. Use xylitol, erythritol granules, or granulated sugar-free erythritol. I CAN’T VOUCH FOR THEM since I haven’t tried liquid sweeteners (like maple syrup or stevia) here.

Vegan hummingbird cake

The traditional hummingbird is a banana pineapple cake that’s sweet with cream cheese frosting, cinnamon, and pecans. It is popular in the southern United States and Jamaica.

You can turn this healthy vegan cake into the classic hummingbird by replacing a third of the bananas in the recipe with finely crushed canned pineapple.

Double the cinnamon and add the crushed pecans after draining the pineapple.

You can top this homemade hummingbird with your favorite cream cheese frosting or the vegan cream cheese frosting below. This cake is also delicious with caramel frosting.

Make a healthy banana cake

Preheat your oven to 350 degrees Fahrenheit. Use parchment paper to line or grease two 8-inch square or round pans or one 9-inch by 13-inch pan.

All liquid ingredients, including the banana, should be whisked together. To save time, you can do this the day before by covering and refrigerating it after mixing.

Mix all ingredients until they are evenly distributed. It is important not to overmix gluten-containing baked goods to achieve the best texture and avoid dense results.

Smooth out the batter into the pans. Place the pans on the center rack of the oven that has been preheated.

The cakes should be baked for 30 minutes or until the toothpick is primarily clean when inserted in the middle of the cake. Allow the cakes to cool, then use a knife around the sides. Invert each cake onto a serving plate.

Let the cake cool completely before frosting. When I bake, in general, I often make the cakes the day before frosting them.

Vegan frosting recipe

This banana cake is delicious topped with vegan vanilla frosting (store-bought or homemade), Coconut Butter, or even Whipped Coconut Cream.

Duncan Hines and Pillsbury Cream Cheese Frostings are vegan by accident and can be used in a rush.

You can also use the following vegan cream-cheese frosting recipe:

Beat 8 oz of room temperature cream cheese (such as Tofutti, Trader Joe’s, or homemade Vegan Cheese) with 4 oz of butter (such as a plant-based Melt, Earth Balance, or Coconut Butter), 2 cups powdered icing sugar, and 1-2 tsp pure vanilla extract.

You can add a small amount of non-dairy milk as required. Add a quarter teaspoon of cinnamon and a pinch of nutmeg or cloves if you like.

This recipe makes about two cups. In the pictures, I used half a cup of dairy-free frosting to cover each layer of vegan banana cake.

Baking with Gram Measurements

Here are the grams to use instead of cups in the recipe box.

Water and flour each: 240 g, 15 g of pure vanilla extract, vinegar 22 grams of oil, 60 grams of peanut butter, 65 grams of sugar, and 240 g of mashed banana after peeling or two bananas.

Ingredients

1 cup of mashed banana

One cup of water

Add 1/4 cup peanut butter or oil to bananas

White or cider vinegar, 1 1/2 tablespoons

1 tbsp pure vanilla extract

Baking soda, baking powder, and salt: 1 tsp.

If desired, 1/3 cup of sugar can be unrefined.

Optional 1/2 tsp Cinnamon

Instructions

Preheat oven to 350 F. Line or grease two 8-inch pans with parchment paper. Mix liquid ingredients, including banana. Mix all the remaining ingredients with the liquid. Smooth into the pans. Bake for 30 minutes until the toothpick inserted in the middle of the cake is mostly clean. Allow to cool, and then use a knife to go around the edges of the pan before inverting the cake.
