Cheesy Vegan Spinach & Artichoke Dip

Ingredients:

  • 1 cup raw cashews, soaked in hot water for 1 hour (or overnight)
  • 1 cup unsweetened almond milk

  • Two cloves garlic, minced
  • One teaspoon of onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • One tablespoon of olive oil
  • One small onion, finely chopped
  • 1 (10-ounce) package of frozen chopped spinach, thawed and drained
  • 1 (14-ounce) can artichoke hearts, drained and chopped
  • 1 cup vegan shredded mozzarella cheese
  • 1/2 cup vegan shredded Parmesan cheese
  • Additional vegan cheese for topping (optional)
  • Chopped fresh parsley for garnish (optional)
  • Tortilla chips, sliced baguette, or vegetable sticks for serving

Instructions:

Prepare Cashew Cream:

Drain the soaked cashews and add them to a blender with almond milk, nutritional yeast, lemon juice, minced garlic, onion powder, salt, and black pepper. Blend until smooth and creamy. Set aside.
